Vitamin E is not one molecule but eight related ones, and alpha-tocopherol is the form your body actively retains. When a free radical starts oxidising a membrane lipid, the reaction would normally run along the membrane damaging one fatty acid after another. Vitamin E steps in front of it and takes the hit itself, which is the entire mechanism. The cell membrane survives; the vitamin E molecule does not.
What running short looks like
Genuine deficiency is rare in people eating any ordinary diet and is mostly seen in conditions that prevent fat absorption — cystic fibrosis, cholestatic liver disease, some rare genetic disorders. When it does occur it presents neurologically rather than cosmetically: unsteadiness, loss of coordination, muscle weakness and impaired reflexes, because nerve tissue is heavily membraned and feels the loss first.
Where the ceiling is
A thousand milligrams a day of supplemental alpha-tocopherol for adults, and the concern at that level is bleeding rather than anything else: high-dose vitamin E interferes with platelet aggregation and with vitamin K-dependent clotting. That is a long way from 7.4 mg. It is worth knowing because standalone vitamin E capsules are frequently sold at 268 mg and upward, which is a different proposition entirely.
What to be careful about
The bleeding effect is the one that matters. If you take warfarin or another anticoagulant, or aspirin daily, or have surgery scheduled, high-dose vitamin E is a conversation with your prescriber. A modest amount inside a broad formula is not the concern; a 400 IU capsule taken alongside it might be. Large trials of high-dose vitamin E supplementation have generally failed to show the benefits people expected, which is worth remembering before adding more.
Where food supplies it
Sunflower seeds and almonds are the standouts, followed by hazelnuts, peanuts, sunflower and safflower oil, wheat germ, avocado, spinach and red pepper. It is a fat-soluble nutrient found in fatty foods, which makes the pattern easy to remember. Heat degrades it, so heavily processed and long-fried oils carry considerably less than the raw ingredient did.
